Nolen Gur is a special kind of jaggery that is available for only a few months in a year. Nolen gurer payesh is a special variant of payesh or kheer that is sweetened with jaggery in place of sugar. This pays is prepared mostly during the time of Durga puja. Again many Bengali people make it during wintertime.
