Common choices are:
Chorizos: small pork sausages.
Morcilla: blood sausages.
Tira de asado: the perennial favorite, short ribs.
Vacio: flank steak.
Bife ancho: rib-eye steak.
Lomo: tenderloin.
Mollejas: sweetbreads, delicious when cooked until crispy on a hot fire with plenty of lemon.
