Racituri (from rece = cold) is a Romanian and Moldovan dish in which ingredients are set into a gelatin made from the frozen meat of pork, prepared traditionally for celebrations like Christmas and also called piftie in Wallachia. Traditionally, răcituri are prepared from feet, ears and pork heads. Sometimes carrot bytes or other vegetables are added.The broth containing gelatin is poured in bowls, over meat and mashed garlic.
