Kakuni is a Japanese braised pork dish which literally means "square simmered". Kakuni is thick cut pork belly simmered in dashi, soy sauce, mirin, sugar and sake. A specialty of Nagasaki but popular throughout Japan. Served with Karashi hot mustard on the side.
