Hominy Grits (American-Southern)

Hominy is a food which consists of dried maize kernels that have been treated with an alkali in a process called nixtamalization. Grits are made by boiling ground hominy, and usually served with other flavorings as a breakfast dish, usually savory. They may also be found as an evening entrée when made with shrimp.

This is Barbados' national dish. Somewhat similar to polenta or grits, Cou-cou is made with corn meal and okra.
