The beef birani is made with small cubes of beef, regular spices, onions and lots of tomatoes. It has a distinct tomato, jeera, dhania flavour. The spices and condiments used in birani may include clarified butter, nutmeg, mace, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, and garlic. The premium varieties include saffron. The dish may be served with dahi chutney or raita, korma, curry, a sour dish of aubergine, boiled egg and salad.
