Your beef choices are bo chin, which is sliced well-done steak; bo tai, sliced rare steak; nam, flank steak; ve don, crunchy flank steak; gau, fatty brisket; gan, tendon; sach, tripe; and bo vien, beef meatballs, usually with tendon.
