Fried Soft-Shell Crab is an American snack that originated from New Orleans. Soft-shell crab is a culinary term for crabs that have recently moulted their old exoskeleton and are still soft. Soft-shells are removed from the water as soon as they moult to prevent any hardening of their shell. Softshell crab is mixed with flour, salt, pepper, milk, egg and deep-fried in oil.
