Ethiopians love meat and it’s evident in their cuisine. Walking along the streets of Addis Ababa, you’ll get whiffs of freshly butchered meat, hanging in open air butcheries ready to be sliced and sold.
While there are many ways Ethiopians cook and enjoy meat, one of their favorites is the derek tibs. It is made with goat or beef meat, sliced into pieces, fried with butter and served inside a flaming hot ceramic dish.
