Cubed fish (usually tuna) is sautéed in a blend of spices including black pepper, cinnamon, turmeric, garlic, pandan leaves and curry leaves. The most significant ingredient is dried goraka, a tamarind-like fruit that gives the fish its distinctive, tart flavour.
