Chiri Uchu is the most representative dish from Cusco, Peru. This dish comes from the Incas and colonial times in Peru using ingredients from the coast and the highlands. The dish is originally eaten cold and has a combination of many ingredients from many regions of the country like hen meat, guinea pig, fish roe, blood sausage, seaweed, potatoes, tortilla, corn, cheese, and chilli.
